Introducing Tokyo's first tamale kitchen, high taste, low impact cuisine.
We're pioneering a new genre of Tex-Mex, bringing traditional concepts and ingredients, fusing with alternative low impact ingredients while preserving and respecting the essence of the former.
What are tamales?
People have been eating tamales for almost as long as there have been people in Central and South America. A tamale can be a lot of things but it's typically some kind of spiced filling, enclosed in a corn based flour dough, which is then wrapped in some kind of wrapper (such as corn husks or banana leaves) then steamed or boiled. We use a vegetarian (and thus lower carbon) filling, encased in a masa based dough and steam them in a corn husk wrapper. Corn husks, which are usually just thrown out, can be instead of wrapping the product in place of plastic and also can used as an ad hoc plate. You're then free to choice your favorite sauce depending on your spice tolerance and tastes.

Down with single use
In addition to our dedication to lower our carbon footprint, we strive to lessen our impact on the planet by doing away with single use - anything. Single use plastic bags take a lot of the heat but anything single use, whether it's recyclable or not, can have a big (and sometimes worse) climate impact. To that end, we do away with all that we can like single use plastic bags, but also single use paper bags, paper cups, aluminum cans, single use plastic bottles, glass bottles, etc., etc.
